My husband, Ron, and I occasionally dine at a local Lizard Thicket Restaurant and order their chicken fried livers. They are great and nutritious, especially with their toss salad and blue cheese dressing. Following is a receipe that we have been experimenting with for some time that has the same crispy and tasty flavor that one would desire. Try it. You’ll enjoy it. Miss Patsy’s Kitchen. Ingredients
3 lbs. Chicken Wing Pieces ¼ Cup Texas Pete Hot Sauce
1 Cup All Purpose Flour 1 ½ tsp Table Salt
2 Bottles Favorite Beer 1 tsp Black Pepper
Prepared Mustard (1 full tsp/wing piece) ½ tsp Granulated Garlic
Cooking Suggestions
Step 1. Empty wing pieces into large zip lock freezer bag and add beer. Sit in refrigerator for 2 hours. Remove and empty pieces into large bowl, discarding the beer. Add ¼ cup Texas Pete Hot Sauce to coat pieces, sprinkle ½ salt, ¼ black pepper and ¼ tsp garlic. Add mustard and coat pieces. Mix with hands. Let stand for step 2.
Step 2. Mix into flour 1 tsp salt, ½ tsp pepper and1/4 garlic. Roll mustard coated chicken in flour mixture thoroughly. Cook in oil at 350 degrees F. until dark golden brown. Note (it is important to season meat and flour before cooking for that special taste.)
