This is a new recipe Ron and I came up with, and used recently to feed 19 people. We cooked 12.5 lbs. and not a morsel was left.
Ingredients:
Batter Mix
2 ½ lbs. Filleted Cod ¼ tsp. Cayenne Pepper
1 Cup All Purpose Flour 1/8 tsp. Garlic Powder
¼ Cup Self-Rising Flour ¼ tsp. Old Bay Seasoning
1 Tsp. Salt 1/2 tsp. Dash
½ Tsp. Black Pepper
Marination
Liberally coat fillets with butter milk and Texas Pete Sauce in a large baking pan. Sprinkle fillets on 1 side with Salt, Black pepper, Garlic Powder and Old Bay Seasoning as desired. Toss all ingredients with filet/Texas Pete Sauce and put in large zip lock freezer bag. Marinate in refrigerator for 30 minutes while mixing the Batter Mix.
Cooking Suggestions:
Thoroughly mix the batter mix ingredients. Add batter mix and filet pieces into plastic shopping bag. Shake to coat all filet pieces. Fry in deep frying pot with about 1 ½ inches of oil until golden brown.
