This is a meat loaf recipe with a red sauce and onions that was given to me recently. Try it. You’ll like. Miss Patsy’s Kitchen

 

Ingredients:

2 lbs. ground beef (Angus)

1 cup grated onion

1 cup bread crumbs

½ cup milk

2 eggs beaten

2 teaspoons dried parsley

½ teaspoon salt

½ teaspoon black pepper

2 tablespoons brown sugar

1 tablespoon dry mustard

1/3 cup ketchup

½ cup sliced onion

 

Directions:

Preheat oven to 350 degrees

Mix together beef, grated onion, bread crumbs, milk, eggs, parsley, salt and pepper until well combined. Form into a loaf, about 9 x 5 inches and place into baking pan.

In a small bowl, combine brown sugar, mustard and ketchup. Stir until sugar is dissolved. Add onions, toss to coat and pour over meat loaf. Bake for 1 hour or until internal temperature is 180 degrees. Lift meat loaf and place in large serving platter. Add your favorite vegetables on each side. Suggestions: green lima beans, green snap beans, asparagus, sweet corn and mashed potatoes.

“Miss Patsy,” is the eldest of four children, all born in a country house built before 1900. She was taught to cook at an early age by her mother, Miss Mildred Ross.  It was and still is a sign of respect in certain pockets of Kershaw county to refer to locals by their name with Miss or Mr. preceding the first name. Simple home cooking was the rule of the day, and nothing was thrown away.  A cook book was hardly followed and recipes were shared using terms like “use a pinch of this, pinch of that,” and “add to taste.”  Miss Patsy is pretty darn good cook—so Professor Ron married her 41 years ago.
