Pimiento cheese is a southern dish originating in the Piedmont section of South Carolina around the early 1900s. Our grandmothers made it as a snack and not to be eaten with a full meal. It will stick to your ribs.
¾ cup mayonnaise
2 tsp. finely graded onion
1/8 tsp. ground red pepper
2 oz. diced pimiento peppers, drained
½ cup chopped green olives
Dash of garlic powder
1/8 tsp. black pepper
Makes delicious grilled cheese sandwiches and a prize winning topping on grilled hamburgers. Enjoy, Miss Patsy
