Salmon Patties

I remember Miss Mildred, my mother, loved to fry fresh caught bream from our farm pond, but occasionally she would mix up some salmon patties when the fish weren’t biting. This recipe has been modified by substituting House-Autry’s Seafood Breader for corn meal.salmonpatties2sm

Ingredients

1 Can Salmon

2 Eggs

Black Pepper

Salt lightly

1 Cup crumbled saltines

1 Cup House-Autry’s Seafood Breader

½ Cup chopped onions (optional)

Cooking Suggestions

Crumble salmon and juice together.

Beat eggs, pepper and salt lightly, onions and mix with crackers.

Add mixture to salmon and mix.

Ball palm size mixture and roll over seafood breader.

Press into patties and fry on medium heat.

“Miss Patsy,” is the eldest of four children, all born in a country house built before 1900. She was taught to cook at an early age by her mother, Miss Mildred Ross.  It was and still is a sign of respect in certain pockets of Kershaw county to refer to locals by their name with Miss or Mr. preceding the first name. Simple home cooking was the rule of the day, and nothing was thrown away.  A cook book was hardly followed and recipes were shared using terms like “use a pinch of this, pinch of that,” and “add to taste.”  Miss Patsy is pretty darn good cook—so Professor Ron married her 41 years ago.
