TURKEY POT PIE

This is a recipe scribbled on a piece of paper dated 12/30/09. I wish I could remember who this friend was that gave it to me. Truly this is the best turkey pot pie I have ever tasted. Pot pies go very well with southern slaw and kosher pickles. Enjoy, Miss Patsy’s Kitchen.

INGREDIENTS

Butter as needed to grease baking pan

1 lb. mixed vegetables with onion

Salt and pepper as needed

1 can chicken or celery soup

1 can chicken broth

1 cup self rising flour

1 cup butter milk

COOKING SUGGESTIONS:

Preheat oven 350 degrees F.

Melt enough butter to grease 13 x 9 inch pan.

Place sliced cooked turkey over butter.

Place cooked mixed vegetables with onions, salted and peppered, over turkey.

Mix 1 can cream of chicken soup or 1 can celery soup and 1 can chicken broth.

Heat mixture and pour over mixture.

Mix 1 cup self rising flour with 1 cup plus butter milk and spread over ingredients.

Top with dots of butter over misture.

Bake 35 – 45 minutes until crust forms over and turns brown.

“Miss Patsy,” is the eldest of four children, all born in a country house built before 1900. She was taught to cook at an early age by her mother, Miss Mildred Ross.  It was and still is a sign of respect in certain pockets of Kershaw county to refer to locals by their name with Miss or Mr. preceding the first name. Simple home cooking was the rule of the day, and nothing was thrown away.  A cook book was hardly followed and recipes were shared using terms like “use a pinch of this, pinch of that,” and “add to taste.”  Miss Patsy is pretty darn good cook—so Professor Ron married her 41 years ago.
