Bacon, Lettuce, Tomato Salad

BACON, LETTUCE, TOMATO    SALAD

 

Blt sandwiches are a delight when tomatoes are in season.  However, they can be messy when the ripen tomato slices begin to drip their watery juice onto your lap, leaving you with two soggy slices of bread.  Here is a very refreshing blt in a salad form.

 

Ingredients:

2 large ripe tomatoes

½ Medium onion

½ head iceberg lettuce

6 strips cocked bacon

2 tbsp. olive oil

¼ tsp. Salt

¼ tsp. Black pepper

French toast with  melted butter, olive oil and oregano mixture

 

Preparation:

Tear lettuce into bit size pieces, slice onion in thin slices and halved, slice tomatoes about ¼ inch thick and halved, add bite size crisp bacon, and mix into ingredients olive oil, salt and pepper. Your favorite salad dressing may be added.  Mix all ingredients together and chill.  Enjoy.  Miss Patsy’s Kitchen

“Miss Patsy,” is the eldest of four children, all born in a country house built before 1900. She was taught to cook at an early age by her mother, Miss Mildred Ross.  It was and still is a sign of respect in certain pockets of Kershaw county to refer to locals by their name with Miss or Mr. preceding the first name. Simple home cooking was the rule of the day, and nothing was thrown away.  A cook book was hardly followed and recipes were shared using terms like “use a pinch of this, pinch of that,” and “add to taste.”  Miss Patsy is pretty darn good cook—so Professor Ron married her 41 years ago.
