Paw Paw Lima Bean Soup
The original Paw Paw Lima bean Soup was cooked by Miss Patsy’s grandfather Paw Paw Thurmond Motley, conductor on the Eastern Seaboard train running from Columbia, S. C. to Hamlet N. C. It is said he cooked up his version of the soup on a coal fired stove in the caboose. The following recipe is prepared by Miss Patsy with some modifications.
Ingredients
1 Lb. Dry Lima Beans
1 Large Onion Sliced
1 Large Green Pepper Chopped
1 Teaspoon Dry Mustard
1 Teaspoon Salt
½ Teaspoon Black Pepper
1 Lb. Turkey sausage sliced & Browned in skillet
1 Can Tomato Soup
1 or 2 Dashes Powdered Garlic
3 Cups water
Cooking Suggestions
Brown turkey sausage in olive oil and add garlic
Add onions, green pepper, dry mustard, salt black pepper tomato soup and water. Cook over night in crock pot or until beans are soft. Do not pre-soak beans for better texture. Enjoy. Miss Patsy’s Kitchen.
